Our 18 Rabbit Naturally processed! Señora Flhor refers to this as her "crunchberry" coffee due to it's sweetness from the Natural processing. The natural process, also known as the dry process, is a back-to-basics approach that stems from Ethiopia. The fruit is left on the bean and there’s little disruption to the coffee while it dries. Instead of being separated from the skin and pulp like a washed coffee, natural processed coffees are laid out in the sun so that the cherry can dry intact after harvesting. The 18 Rabbit farms are owned by Señora Flhor, her mother, and 11 other members of her immediate and extended family.

The beans are grown on a female owned micro-lot in the Marcala region and naturally processed. We roast at medium to dark for a brighter/crisper cup with a hint of chocolate. It has a honey like sweetness, with a silky body and still just a hint of chocolate.
